Salmon Patties also known as salmon croquettes is a wonderful dish to serve for breakfast or dinner. Serve with eggs, grits or tomatoes to bring the flavors out.
EQUIPMENT
- 1 Cast iron or non-stick frying pan
- 1 Mixing bowl
- 1 Fork
INGREDIENTS
- 1 16 oz can Pink Salmon
- 1/2 cup Mashed Potatoes I use processed flaked boxed mashed potatoes.
- 1/2 cup Bell Pepper
- 1 tbsp Seasoning Mix I use Morton's Natures Seasoning
- 1/2 cup Onion I use a sweet vidalia onion
- 1 egg
- 2 tbsp water
- 2 tbsp oil I use vegetable oil
INSTRUCTIONS
- Open 1 can of Pink salmon and drain the mixture.
- Pick apart the salmon and make sure you remove the round bones
- Add 2 tbsp. water to the mashed potato flakes. Use more if needed. Add to salmon
- Dice onions and add to salmon mixture
- Dice the bell pepper and add to your recipe.
- Add seasoning.
- Add the egg.
- Heat the pan on Medium high and add the oil
- Form the mixture into a round patties, about 1/2 a cup. The round pattie should fit in the palm of your hand.
- Place the pattie into the frying pan and cook until it is a caramel brown color on both sides.
- Serve with eggs and grits for breakfast or with tomatoes for dinner.
