Collard Greens require cleaning before cooking even if you are buying them bagged. There is nothing worse than gritty greens. When I took over cooking the family greens, my mother made sure I cleaned them perfectly. Each leaf was touched with care. Below are directions for making sure that you green are cleaned well before cooking.
Cleaning Collard Greens
Wipe down the front a back of the collard green leaf with a damp paper towel
Remove the stem with a sharp knife (optional). You may keep the stem if you like for nutritional purposes. I remove them.
Roll collard greens together
Slice greens into long strips
Soak collard greens in a sink or tub of water. The salt will remove any residue not removed when cleaning.
Cover the greens with salt. The salt will remove any residue not removed when cleaning.
Let soak for at least 2 hours or overnight.
Remove from water and place in a plastic bag. Freeze or use when ready.
